Everyone is familiar with the old saying, “an apple a day keeps the doctor away” – and with prime apple season upon us, there’s no excuse for why you can’t work at least one into your diet each day. This month’s issue of Eating Well includes the following easy recipe.
6 tart apples peeled and cut into 1-inch pieces
2 sweet apples peeled and cut into 1-inch pieces
1/4 c. water
2 Tbs. pure maple syrup
1/2 tsp. ground cinnamon
Combine apple pieces and water in a large saucepan. Bring to a boil, then reduce temperature to maintain a simmer. Cover and cook, stirring once or twice until of apples are soft and tender and falling apart (about 30 minutes). Mash the apples to desired consistency and stir in maple syrup and ground cinnamon.
The recipe makes 3 1/2 cups of sauce. It can be stored in the refrigerator up to two weeks or frozen for up to six months.
